過了一個年,家裡多了很多年柑,不能一時吃太多,也來不及吃,很多都快發黴了。上一期我們做了年柑牛油蛋糕,今天我們再做一個年柑雞蛋糕,把存貨都清清掉。此蛋糕可蒸可烤,任君挑選。

***視頻中我們自己調配低筋麵粉(普通麵粉75%+玉米澱粉25%),直接用低筋麵粉的話,取150g低筋麵粉就好,普通麵粉和玉米澱粉都不用了。普通麵粉或也叫中筋麵粉,和低筋麵粉的差別是筋度比較高,往裡面加玉米澱粉來降低筋度,原則上就是低筋麵粉了。當然這都是籠統的變換公式,和真正的低筋麵粉還是稍有不同,不過對於家庭製作我是覺得完全吃不出差別。 | 75g | 300g |

***In the video, we prepared cake flour (plain flour 75% + cornstarch 25%). If you use cake flour directly, just take 150g, and plain flour and cornstarch are not needed. Plain flour differs from cake flour in that it has a relatively high gluten. Adding cornstarch to it to reduce the gluten, in principle it become cake flour. Of course, this is a general formula, and it is slightly different from the real cake flour, but I don't feel any difference as home baking. | 75g | 300g |
