Pour
water into a bigger baking pan around 2cm high.
Preheat
the oven to 120°C.
Use
low heat and stir until very smooth.
Add
4 egg yolks and stir until smooth.
Add
40g cake flour and stir well.
Add
40g corn starch and stir well.
Add
in 70g sugar in total by 3 times.
Whisk
until soft peaks formed.
Add
1/3 meringue into the batter and mix well.
Pour
over the batter into the meringue and mix well.
Wrap
the 6 inches cake tin with foil.
Bake
the cake in water with the
following
temperature and time:
